Every few years, a category of food ingredients surfaces in public conversation with the weight of a revelation. Usually, it has been known for a long time. The knowledge just had not reached the people who were not reading the research journals.
Seed oils are having that moment now. And unlike some food fears, this one has solid science behind it — not just folklore.
Here is what the research actually says, and what you can do about it.
What Are Seed Oils?
Seed oils are refined vegetable oils extracted from the seeds of plants: canola (rapeseed), soybean, corn, sunflower, safflower, cottonseed, and rice bran, among others.
The problem is not the seeds. The problem is what happens to them.
These oils are not cold-pressed like extra virgin olive oil or unrefined coconut oil. They are extracted using high-temperature chemical solvents — usually hexane, a petroleum byproduct — and then refined, bleached, and deodorized. The final product is a clear, odorless, inexpensive oil that works well in industrial food production.
The processing is what creates the concern.
The Oxidation Problem
Fats oxidize. It is a normal chemical process. Some fats oxidize more quickly than others, particularly when exposed to heat, light, or oxygen.
Seed oils are high in polyunsaturated fatty acids (PUFAs), particularly linoleic acid. These fats are unstable at high temperatures. When you cook with seed oils — especially frying — they undergo oxidative degradation and form compounds called lipid oxidation products (LOPs), aldehydes, and other polar compounds that are documented to cause cellular damage in animal studies and are suspected of contributing to chronic inflammation in humans.
This is not a theory. The research is there. It is in the food science literature. It has been there for years.
Whether this damage is significant at typical dietary levels is still debated in mainstream nutrition. But the mechanism is established. The question is not whether oxidation happens. It is how much of it matters at the doses most people consume.
For people eating a standard Western diet with significant fried food and processed snacks, the answer is probably: it matters.
The Omega-6 Imbalance
Another concern is the ratio of omega-6 to omega-3 fatty acids in the modern diet.
Omega-6 and omega-3 are both essential fatty acids. They are needed. But they need to be in a roughly balanced ratio — ideally somewhere between 4:1 and 1:1 — for the body to use them properly.
The modern Western diet, heavy in seed oils and processed foods, pushes this ratio to somewhere between 15:1 and 25:1. At those levels, omega-6 fatty acids promote systemic inflammation rather than modulating it.
This is not unique to seed oils. The ratio is also driven by grain-fed animal products, which accumulate omega-6 from the grains they are fed. But seed oils are one of the most concentrated sources in the average diet.
What About the Alternative Claims?
The American Heart Association and some mainstream nutrition authorities maintain that seed oils, when consumed in moderation, are not a significant health risk. This position is not unreasonable given the limitations of the evidence. Large-scale human trials are difficult to conduct in this area, and much of what we have is observational and mechanistic.
The honest position is: the science is suggestive, not definitive. The mechanisms are concerning. The practical response is to reduce consumption without abandoning reason.
You do not need to panic about the seed oil in a bottle of salad dressing you use twice a month. You probably should reconsider the oil you fry your food in every day.
The Alternatives Are Simple
This is the part that surprises people. The better fats are not expensive, obscure, or difficult to find. They are the fats humans have used for most of human history.
Olive oil. Extra virgin for dressings and low-heat cooking. Regular olive oil (refined, not extra virgin) for slightly higher heat. It is stable, well-studied, and deeply traditional.
Avocado oil. Smoke point around 520°F. Neutral flavor. Works for nearly anything you would use seed oil for, including high-heat cooking. Browse clean cooking oils on /shop.
Beef tallow, lard, duck fat. Animal fats have been used for cooking for thousands of years. They are stable at high heat. They contain fat-soluble vitamins. If you eat animal products, these are legitimate choices.
Butter and ghee. Butter is stable enough for most cooking. Ghee, which is clarified butter with the milk solids removed, has a high smoke point and a long shelf life.

If you want to move away from seed oils, do not pour them down the drain. That is wasteful and unnecessary.
Use them up. Then do not buy them again.
For cooking going forward: keep one bottle of a stable fat as your default — olive oil or avocado oil. Use it for everything. The transition takes about one shopping trip.
For processed foods: this is harder, because seed oils are embedded in nearly every category of packaged food.
The Larger Point
Seed oils are one piece of a larger picture. They are not the only thing wrong with the standard diet, and removing them alone will not fix it. They are one thread in a system designed to be cheap and shelf-stable at the cost of being genuinely nourishing.
But they are a thread worth pulling. Because once you start noticing where they are — and how much you consume without realizing it — you begin to make different choices without much effort.
